Chimera is vibrant with ruby red color. There are aromas of rose petal, cherry, and watermelon mixed with subtle brown sugar. This Pinot Noir is precise in structure with an elegant, fine balance of fruit and tannins. The flavor extend to dark cherry fruit with hints of exotic of pomegranatew with nuances of mint and cinnamon.
Sean Capiaux founded Capiaux Cellars in 1994 while still working at Peter Michael Winery. Capiaux Cellars is dedicated to producing small lots of vineyard designated Pinot Noir from California, using traditional Burgundian techniques.
