Capiaux Cellars is dedicated to producing single vineyard bottlings of Pinot Noir using traditional Burgundian techniques. The philosophy is to produce wines that express the unique terroir of the source vineyards. Therefore, all the wines are naturally fermented to preserve their inherent flavors and aromas. The style is neoclassical in that modern equipment is used to produce traditional wines in a non-interventious manner. A minimal amount of new oak is used, typically 30%, with the remaining oak being two years old. The wine is aged in barrel for 10 months before being bottled, unfined and unfiltered.

Bright cherry, peppermint, hibiscus, floral black cherry cola, sandalwood and forest floor aromas are followed by sweet and ripe flavors of plum with a lingering fig aftertaste.
